Editor's Notes
February 18, 2021:
Truffle salt is one of our favorite ways to include the magical flavor of truffles in any dish, and in fact is much more authentic than almost every truffle oil out there, although both do have their proper place. For selecting a salt, it's hard to find one more strongly flavored than Selezione Tartufi, which is why it remains at the top of our list. For those who prefer a slightly rounder and more muted truffle, Tartuflanghe Grey uses black summer truffles and also relies on premium sel gris to deliver interesting notes.
This time around, we also added Taste of Truffles Smoked, because it's hard to go wrong with two such remarkable and beloved flavors, although those flavors won't stick around for very long in the presence of heat. For something slightly more durable, consider Taste of Truffles Himalayan or Casina Rossa Ritrovo Selections. If you're looking for something affordable and don't need a product that will knock you off your feet with flavor every bite, San Francisco Salt Company and Caravel Gourmet are two worthwhile low-cost and finely ground options.

Truffle salts deliver the gourmet taste of a prohibitively expensive delicacy for a fraction of the price. While nothing will replace eating fresh-from-the-ground truffles, a good truffle salt will be the next best thing for those of us who don't live in France or Italy.
The Selezione Tartufi took the top spot for its pungent aroma and high ratio of truffle to salt, which makes it a better choice for those watching their sodium intake.
We decided to include the option from the San Francisco Salt Company, even though the container doesn't seem to hold in the flavor longer than a few months. The shaker is very convenient, especially if it's being used for a serious popcorn habit, or as a finisher on most meals. In this case, you'll probably need to buy more before the flavor has had a chance to fade.
