Roasting your own coffee is a highly variable and individual experience. It's up to you how long you roast your beans and at what temperature, as well as the equipment you use to roast them, whether that's a skillet or a popcorn popper. All of these factors will affect the flavor and caffeine content of your brew, and your preferences in these areas will in turn dictate which beans suit you best.
A major factor that determines a bean's attributes is the altitude at which it's grown. Beans grown over 5,000 feet above sea level like Heirloom Dota Estate, Lulo Sidamo, and Morning Hills Yirgacheffe have cupping notes of fruit, berries, spice, and wine, as well as relatively low levels of caffeine compared to beans grown at lower elevations. Those cultivated between 2,500 and 5,000 feet above sea level, including most grown in Brazil like Volcano Adrano and Primos 3-Pound Caturra, will have more nutty, chocolatey, and citrus flavors.
