They are easy to eat on-the-go and are an exotic alternative to a standard sandwich, with meat that is seasoned and processed into a drum, which may be straight-sided or conical.
A shawarma machine vertically rotates this meat next to a heat source, and thin slices are shaved off with a long, flat knife at the desired thickness, while the outer layer continues to cook. This reduces preparation time, as the filling doesn't need to be cooked to order and can be served hot at a moment's notice.
