The 10 Best Cassava Flours
This wiki has been updated 21 times since it was first published in May of 2018. If you suffer from celiac disease or are simply trying to cut grains from your diet, these cassava flours are an excellent replacement for their wheat-based counterparts. We’ve rounded up selections that are both finely and coarsely ground, with many that are light in color and offer neutral tastes and textures, making them well-suited to almost any recipe, whether savory or sweet. When users buy our independently chosen editorial selections, we may earn commissions to help fund the Wiki.
Editor's Notes
June 16, 2020:
Cassava flour is considered by many to be the holy grail of grain, gluten, and nut-free cooking. It's also vegan, vegetarian, and paleo, adding to its versatility. Like tapioca flour, it comes from the cassava root, a starchy tuber high in carbohydrates, so it's not an ideal substitute to use in every meal if you're on a diet or cutting carbs.
It's very similar to all-purpose flour and can be ground to have an extremely smooth texture that can be substituted on a 1:1 basis with it, with a neutral flavor that lends it well to desserts, savory dishes, and as a thickener for stews. If you don't have allergies to nuts, it mixes well with almond flour and coconut flour when you want to experiment with textures and densities. And while it does have naturally occurring cyanide compounds when in tuber form, it's only toxic when eaten raw and unprocessed.
Today we said goodbye to a handful of options to make room for a few new players, including Tiana All-Purpose and Moon Rabbit Premium, which became unavailable, and Jeb Foods Yuca, which has suffered recently from complaints regarding the quality control.
When cassava is coarsely ground, it's excellent for a range of savory Latin American style meals, and we added Yoki Seasoned Farofa alongside the likes of Amafil Branca and Julia Farinha de Mandioca to speak to that. Yoki Seasoned Farofa is ready to eat and pre-seasoned, making it an easy addition to a range of foods. We also brought on King Arthur Flour Substitute for those with sensitivities who don't want to buy three separate flours for their baking blends, and Iya Foods Premium and Bob's Red Mill Grain Free to round out our high-quality, organic, finely-textured offerings.
