This wiki has been updated 20 times since it was first published in October of 2018. Whether you're breaking down a chicken in your kitchen or field-dressing a deer in the woods, a good boning knife can make your job a whole lot easier. Sporting narrow blades and sharp tips, they offer a great degree of precision and can fit into tight spaces around joints and other hard-to-reach spots. Our list includes high-quality options at price points for every budget. When users buy our independently chosen editorial selections, we may earn commissions to help fund the Wiki.

Editor's Notes

December 11, 2020:

We had to remove the Buck Knives Open Season and the Wüsthof Black due to availability concerns.

We added the Tuo Black Hawk S, a sleek and popular option that's sharpened and hardened by time-tested traditional methods and which comes in a high-end carrying case to boot. We also decided to include the Mercer Culinary Ultimate, which has textured finger points on its handle so that your hand is less likely to slip, an especially important consideration given this model's razor-sharp blade.

While the curved, flexible version of the Victorinox Fibrox Pro faces some availability issues, all four other models are still available and so high-quality that we've decided to keep it on the list.

Of course, while all of these knives are great for their intended purpose, there are lots of different kinds of knives you may need in the kitchen. If you need a more versatile, all-purpose blade, check out the best chef's knives or kitchen knives.

October 26, 2018:

The Victorinox Fibrox Pro shines for its exceptional reputation and affordable price. We chose options in a variety of lengths and materials to suit any task, from filleting to breaking down large cuts of meat, and included the Buck Knives Open Season as an option specifically designed for hunters.
